{"id":1408,"date":"2009-12-02T21:59:11","date_gmt":"2009-12-03T03:59:11","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=1408"},"modified":"2009-12-02T21:59:11","modified_gmt":"2009-12-03T03:59:11","slug":"pumpkin-buns","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/12\/02\/pumpkin-buns\/","title":{"rendered":"Pumpkin Buns"},"content":{"rendered":"<p>I&#8217;m posting lots of recipes this week.\u00c2\u00a0 Hopefully I&#8217;ll have something different to talk about in the next few days, but for now it feels like all I&#8217;ve been doing is cooking and baking lately, and I have a couple recipes that I just had to share!\u00c2\u00a0 I&#8217;ve had these pumpkin rolls on my Menu Plan for oh, about a month, and I&#8217;ve been thinking about them since I first saw the recipe in the October issue of Family Circle.<\/p>\n<p>I FINALLY got around to making them last night and they turned out great despite 3 errors on my part.\u00c2\u00a0 These are some VERY forgiving pumpkin buns!\u00c2\u00a0 Things I did wrong:<\/p>\n<p>1) Used pumpkin pie filling instead of pumpkin puree.\u00c2\u00a0 (I grabbed the wrong can at the store)<\/p>\n<p>2) Only rolled out the dough into ONE rectangle, instead of 2.\u00c2\u00a0 This recipe makes 2 pans of buns, but I rolled out the dough, filled, and rolled them up before I looked back at the recipe to see that I should have done that twice.\u00c2\u00a0 This turned out okay though, because I liked how bready and big they were!\u00c2\u00a0 (If you do this, just make sure you split them into several pans so they have room to spread out).<\/p>\n<p>3) Didn&#8217;t grease the pan.\u00c2\u00a0 Lots of crunchy cinnamon-y goodness got stuck to the bottom of the pan instead of the bottom of the rolls.<\/p>\n<p>The pumpkin flavor in these isn&#8217;t very strong, but they are delicious!<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1411\" title=\"Pumpkin Rolls\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/12\/Pumpkin-Rolls.jpg\" alt=\"Pumpkin Rolls\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/12\/Pumpkin-Rolls.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/12\/Pumpkin-Rolls-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/h4>\n<h4>Pumpkin Buns<\/h4>\n<p>from Family Circle, October 2009<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 envelope (1\/4 ounce) active dry yeast<\/li>\n<li>1\/4 cup warm water (100 to 110 degrees F)<\/li>\n<li>1 teaspoon plus 2 tablespoons granulated sugar<\/li>\n<li>2 eggs<\/li>\n<li>1\/4 cup (1\/2 stick) unsalted butter, melted<\/li>\n<li>1 can (15 ounces) solid-pack pumpkin<\/li>\n<li>5 1\/2 cups all-purpose flour<\/li>\n<li>3\/4 teaspoon salt<\/li>\n<\/ul>\n<p>Filling:<\/p>\n<ul>\n<li>1\/2 cup (1 stick) unsalted butter, softened<\/li>\n<li>1\/4 cup granulated sugar<\/li>\n<li>1 cup packed light-brown sugar<\/li>\n<li>1 tablespoon cinnamon<\/li>\n<\/ul>\n<p>Glaze:<\/p>\n<ul>\n<li>2 cups confectioners&#8217; sugar<\/li>\n<li>3 tablespoons milk<\/li>\n<\/ul>\n<p>Sprinkle yeast over warm water in large bowl.\u00c2\u00a0 Add 1 teaspoon of the granulated sugar; let stand until foamy, about 5 minutes.\u00c2\u00a0 Beat in remaining 2 tablespoons sugar, the eggs, butter and pumpkin.<\/p>\n<p>Gradually add 5 cups of the flour and the salt, scraping side of the bowl, until soft dough forms.\u00c2\u00a0 Turn out onto floured surface and knead remaining 1\/2 cup flour into dough, adding more if sticky.\u00c2\u00a0 Knead for 10 minutes, until smooth.\u00c2\u00a0 Dough will be soft.<\/p>\n<p>Grease a bowl; add dough.\u00c2\u00a0 Cover with plastic wrap and place in a warm spot until doubled, about 1 1\/4 hours.<\/p>\n<p>Coat two 13 x 9 x 2 inch baking pans with nonstick cooking spray.\u00c2\u00a0 Make Filling: Mix butter, granulated and brown sugars, and cinnamon in a bowl.<\/p>\n<p>Punch down dough.\u00c2\u00a0 Roll out half onto lightly floured surface to form a 16 x 10-inch rectangle.\u00c2\u00a0 Spread with half of the filling.\u00c2\u00a0 Starting on one long side, roll up jelly-roll fashion.\u00c2\u00a0 Pinch seam to close.\u00c2\u00a0 Repeat with second half of dough and filling.<\/p>\n<p>Cut each log crosswise into 12 generous 1-inch pieces.\u00c2\u00a0 Arrange 12 pieces, cut-side down, in each prepared pan.\u00c2\u00a0 Cover with plastic wrap; let sit in a warm spot until buns double in size, about 30 to 45 minutes.\u00c2\u00a0 (You can refrigerate one pan overnight or cover plastic with foil and freeze at this point.\u00c2\u00a0 Thaw in fridge overnight, then thaw on counter while preheating oven.)<\/p>\n<p>Heat oven to 350 degrees F.\u00c2\u00a0 Uncover pans and bake buns until they are golden brown and bubbly, 28 to 33 minutes (thawed buns, 36 minutes).\u00c2\u00a0 Transfer to a wire rack;
