{"id":1273,"date":"2009-11-21T16:54:29","date_gmt":"2009-11-21T22:54:29","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=1273"},"modified":"2009-11-21T16:54:29","modified_gmt":"2009-11-21T22:54:29","slug":"lasagna-soup","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/11\/21\/lasagna-soup\/","title":{"rendered":"Lasagna Soup"},"content":{"rendered":"<p>I was almost <em>positive <\/em>that I shared this recipe months ago, but apparently I didn&#8217;t.\u00c2\u00a0 This is like a big pan of lasagna, but much easier to throw together.\u00c2\u00a0 The Picky Apple and I absolutely love it, and it makes excellent comfort food on a cold and rainy day like today.\u00c2\u00a0 I haven&#8217;t really found my go-to lasagna recipe, so for now, this makes a nice substitute.\u00c2\u00a0 I found this recipe in <a href=\"http:\/\/familyfun.go.com\/\">Family Fun Magazine<\/a>&#8230;I sure have been mentioning them <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/11\/18\/turkey-fruit-snack\/\">lots<\/a> <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/10\/29\/jack-o-lantern-fruit-cups\/\">lately<\/a>, haven&#8217;t I?!<\/p>\n<p>Some recipe notes: This recipe allows you to add more or less ricotta and cheese depending on how much you like.\u00c2\u00a0 I like LOTS of ricotta, The Picky Apple just likes a little.\u00c2\u00a0 Note that I put the ricotta mixture on top just for this photo&#8230;it is supposed to be on the bottom!\u00c2\u00a0 Also, you can see from the photos that this batch of lasagna soup doesn&#8217;t really look <em>soupy<\/em>&#8230;.the noodles sucked up all the liquid.\u00c2\u00a0 If you want it on the soupier side, you may need to add extra chicken broth.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1275\" title=\"Lasagna Soup\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/11\/Lasagna-Soup.jpg\" alt=\"Lasagna Soup\" width=\"557\" height=\"422\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/11\/Lasagna-Soup.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/11\/Lasagna-Soup-300x227.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Lasagna Soup<\/h4>\n<p>adapted from <a href=\"http:\/\/familyfun.go.com\/\"><em>Family Fun Magazine<\/em><\/a>, February 2009<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 teaspoons olive oil<\/li>\n<li>1\/2 pound ground beef<\/li>\n<li>1 onion, finely chopped<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>2 teaspoons oregano<\/li>\n<li>1\/2 teaspoon red pepper flakes<\/li>\n<li>2 tablespoons tomato paste<\/li>\n<li>1 (28 ounce) can crushed tomatoes<\/li>\n<li>6 cups chicken broth<\/li>\n<li>2 bay leaves<\/li>\n<li>8 ounces fusilli pasta<\/li>\n<li>1\/2 cup finely chopped fresh basil (or a couple teaspoons of dried basil)<\/li>\n<li>8 ounces ricotta<\/li>\n<li>1\/2 cup grated Parmesan<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>Pinch of pepper<\/li>\n<li>2 cups shredded mozzarella (I didn&#8217;t even use this, and it still tastes great!)<\/li>\n<\/ul>\n<p>In a large pot, heat oil over medium heat.\u00c2\u00a0 Add the ground beef and saute, breaking it up into small pieces with a wooden spoon., until the beef is no longer pink, about 5 to 7 minutes.\u00c2\u00a0 Drain any excess fat from the pot.\u00c2\u00a0 Add the onions and saute until softened, about 6 minutes.\u00c2\u00a0 Add the garlic, oregano, and red pepper flakes and saute for 1 minute.\u00c2\u00a0 Add the tomato paste and saute until the paste turns a rusty brown, about 5 minutes.\u00c2\u00a0 Add the tomatoes with their juice, the broth, and the bay leaves and bring the soup to a boil.\u00c2\u00a0 Reduce the heat and simmer for about 30 minutes.<\/p>\n<p>Add the pasta, then increase the heat to medium-high and boil the soup until the pasta is tender to the bite, following the time recommendations on the pasta package.\u00c2\u00a0 Discard bay leaves, then stir in basil.
