{"id":127,"date":"2008-07-03T14:28:05","date_gmt":"2008-07-03T20:28:05","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=127"},"modified":"2009-09-21T20:44:24","modified_gmt":"2009-09-22T02:44:24","slug":"tex-mex-meatloaf","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/07\/03\/tex-mex-meatloaf\/","title":{"rendered":"Tex Mex Meatloaf"},"content":{"rendered":"<p>I hate meatloaf.\u00c2\u00a0 There, I said it.\u00c2\u00a0 Believe me, I <em>want<\/em> to like it.\u00c2\u00a0 Meatloaf is one of those classic American comfort foods, and from what I&#8217;ve heard, it goes great with mashed potatoes (which I love).\u00c2\u00a0 I have tried a handful of different meatloaf recipes, but to no avail.\u00c2\u00a0 I just haven&#8217;t found one that I like.\u00c2\u00a0 Until now.\u00c2\u00a0 Now granted, this isn&#8217;t your standard all-American meatloaf, and perhaps that&#8217;s why I like it.\u00c2\u00a0 That&#8217;s certainly why I decided to give it a chance in the first place.\u00c2\u00a0 Anything with &#8220;Tex-Mex&#8221; in the title gives me pause, and this recipe made it all the way to my recipe file, <em>despite <\/em>also having &#8220;Meatloaf&#8221; in the title.\u00c2\u00a0 This meatloaf, if you can even call it that, tastes very taco and\/or chili-like.\u00c2\u00a0 It definitely isn&#8217;t the prettiest dish on the block.\u00c2\u00a0 But give this ugly meatloaf a try, won&#8217;t you?<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/07\/tex-mex-meatloaf.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-128\" title=\"tex-mex-meatloaf\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/07\/tex-mex-meatloaf.jpg\" alt=\"\" width=\"455\" height=\"280\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/07\/tex-mex-meatloaf.jpg 455w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/07\/tex-mex-meatloaf-300x184.jpg 300w\" sizes=\"auto, (max-width: 455px) 100vw, 455px\" \/><\/a><\/p>\n<h4>Tex-Mex Meatloaf<\/h4>\n<p><em>from Southern Living, May 2008<\/em><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 lb. ground round<\/li>\n<li>1 1\/2 cups crushed tortilla chips, divided<\/li>\n<li>1 (16 oz) can chili beans in sauce, undrained<\/li>\n<li>1 (10 oz) can diced tomatoes with green chiles, drained<\/li>\n<li>1 1\/4 tsp. chili powder<\/li>\n<li>1 tsp. ground cumin<\/li>\n<li>2 large eggs, lightly beaten<\/li>\n<li>1\/2 cup chopped onion<\/li>\n<li>1 garlic clove, minced<\/li>\n<li>1 tsp.\u00c2\u00a0 salt<\/li>\n<li>1\/4 tsp. pepper<\/li>\n<li>1\/2 cup salsa<\/li>\n<li>Torn lettuce leaves<\/li>\n<li>Tortilla chips<\/li>\n<li>Toppings: sour cream, grated Cheddar cheese, chopped tomatoes, sliced olives, guacamole<\/li>\n<\/ul>\n<p>1.\u00c2\u00a0 Preheat oven to 350 degrees F.\u00c2\u00a0 Stir together ground round, 1 cup crushed tortilla chips, beans, and next 8 ingredients in a large bowl until just combined.<\/p>\n<p>2.\u00c2\u00a0 Transfer mixture to a lightly greased 9 inch deep-dish pieplate.\u00c2\u00a0 Place on a rimmed baking sheet.\u00c2\u00a0 Bake at 350 degrees F for 45 minutes.\u00c2\u00a0 Spoon 1\/2 cup salsa evenly over meatloaf;
