{"id":1129,"date":"2009-11-14T20:04:12","date_gmt":"2009-11-15T02:04:12","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=1129"},"modified":"2009-11-15T21:27:41","modified_gmt":"2009-11-16T03:27:41","slug":"beef-cheddar-and-potato-pie","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/11\/14\/beef-cheddar-and-potato-pie\/","title":{"rendered":"Beef, Cheddar and Potato Pie"},"content":{"rendered":"<p>This recipe grabbed my attention right away.\u00c2\u00a0 I love pie.\u00c2\u00a0 I love meat and potatoes.\u00c2\u00a0 But the two of those things combined?\u00c2\u00a0 <em>Intriguing<\/em>.\u00c2\u00a0 This is my first attempt at a savory pie, and it was delicious!\u00c2\u00a0 It was a little labor intensive getting all of the ingredients chopped up and rolling out the pie crusts.\u00c2\u00a0 Definitely more time consuming that a typical Rachael Ray recipe, but well worth the effort!\u00c2\u00a0 As you can see from the picture below, I still need a little work on my pie crust skills&#8230;my top crust didn&#8217;t seal properly with the bottom crust.\u00c2\u00a0 Delicious nevertheless!<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1131\" title=\"Beef Cheddar and Potato Pie 1\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/11\/Beef-Cheddar-and-Potato-Pie-1.jpg\" alt=\"Beef Cheddar and Potato Pie 1\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/11\/Beef-Cheddar-and-Potato-Pie-1.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/11\/Beef-Cheddar-and-Potato-Pie-1-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/h4>\n<h4>Beef, Cheddar and Potato Pie<\/h4>\n<p>from <a href=\"http:\/\/www.rachaelraymag.com\/recipes\/rachael-ray-magazine-recipe-index\/dinner-recipes\/Beef--Cheddar-and-Potato-Pie\">Everyday with Rachael Ray<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 pounds ground beef<\/li>\n<li>2 carrots, cut into 1\/4 inch cubes<\/li>\n<li>1 large onion, cut into 1\/4 inch cubes<\/li>\n<li>2 stalks celery, cut into 1\/4 inch cubes<\/li>\n<li>1 large clove garlic, finely chopped<\/li>\n<li>1 large baking potato, peeled and cut into 1\/4 inch cubes<\/li>\n<li>1\/2 cup dark beer<\/li>\n<li>8 ounces sharp cheddar cheese, shredded<\/li>\n<li>salt and pepper<\/li>\n<li>2 sheets frozen puff pastry, thawed but cold<\/li>\n<li>1 large egg yolk, beaten with 1 tablespoon water<\/li>\n<\/ul>\n<p>Preheat the oven to 375 degrees.\u00c2\u00a0 In a skillet, combine the beef, carrots, onion, celery, garlic and potato and cook, breaking up the meat, over medium-high heat until the beef is cooked through and some of the liquid has evaporated, about 15 minutes.\u00c2\u00a0 Lower the heat to medium, add the beer and cook for 10 minutes.\u00c2\u00a0 Add the cheese, 2 teaspoons salt and 1\/2 teaspoon pepper.\u00c2\u00a0 Let cool.<\/p>\n<p>On a floured surface, roll 1 puff pastry sheet into a 12-inch round.\u00c2\u00a0 Place in a 10-inch skillet or deep pie dish.\u00c2\u00a0 Roll the remaining puff pastry sheet into an 11-inch round.\u00c2\u00a0 Using a slotted spoon, transfer the meat mixture to the skillet.\u00c2\u00a0 Lightly brush the edge of the crust with some of the egg wash, then place the second sheet on top.\u00c2\u00a0 Press the edges to seal, then trim to a 1\/2-inch edge.<\/p>\n<p>Place the pie on a baking sheet.\u00c2\u00a0 Brush the top with more egg wash and cut an &#8220;X&#8221;
